Beef Burgers with Ranch Dressing

Homemade Burgers & Ranch Dressing (makes 4 chunky burgers)

1lb Lobbs Minced Beef

1 Red Onion, finely chopped

1 bunch of fresh coriander, finely chopped

1 tbsp Paprika

1-2 tsp chile powder (more or less to your taste!)

a big splodge of tomato ketchup

A few generous twists of black pepper & seasalt

Combine all the ingredients in a bowl and divide into four balls. Put these onto a baking tray or plate lined with greaseproof paper, flatten into burger shapes and pop them in the fridge for at least an hour before cooking.

For the Ranch Dressing…

1 Cup Mayonnaise

1 Cup Natural Yoghurt

Small bunch of fresh Parsley, finely chopped

Clove of Garlic, crushed

A small squeeze of Lemon Juice

Combine all ingredients together in a bowl and pop in the fridge until ready to serve.

Cook the burgers, preferably on a smoky charcoal barbecue, be careful turning them! Serve with some nice crisp salads, poppy seed rolls from Martin’s Bakery and a generous dollop of the homemade Ranch Dressing
