Cranberry & red wine sauce – serves 8

400ml/14fl oz red wine

100g/4oz Natures Garden caster sugar

2 cloves

1 star anise

1 Hambleden Herbs cinnamon stick

500g/1lb 2oz frozen cranberries


Put the wine, sugar, cloves, star anise & cinnamon stick into a large shallow pan.  Bring to a simmer & cook until the liquid has reduced by half.  Add the cranberries & cook for 5 mins or until the cranberries burst & start to look ‘jammy’.  Set aside & cool.

Make ahead

Can be frozen or store in a jar & kept in the fridge for up to a week
