(Stuffed vine leaves)


1 packet of pre-packed vine leaves

1 large onion

2 cups rice

2 tblspns dill

salt & pepper

1 cup oil

lemon juice

veg stock


Boil vine leaves for 3-4mins, leave to cool

Grate or finely chop onion, add rice, dill, seasoning & oil & mix together. Put vine leaf flat in the palm of your hand. Place a teaspoon of rice mixture in the centre. Fold ends of leaf over the filling & roll it up. Cover the bottom of a saucepan with the filled leaves side by side in layers. Sprinkle with lemon juice, a little oil & some stock.  Place a plate on top of the dolmades to prevent them from splitting open, cover & simmer for about 1 hour.  Top up with more stock if necessary.

The same mixture can be used to stuff vegetables.
