(Honey puffs)


For the syrup

4oz caster sugar

6oz clear honey Boil together until sugar dissolves, cool

little lemon juice

6 tblspns water



For the fritters

1pkt dried yeast or ¾oz fresh yeast

8 fl oz luke warm water

12oz plain flour

pinch salt

6 tbspns lukewarm milk

1 beaten egg

oil for frying



Sift the flour & salt into a bowl. Add little lukewarm water to the yeast to dissolve.  Add yeast mixture, milk & remaining water. Add beaten egg 7 stir well.  Cover with cling film & leave to rise for approx 45mins.  Heat the oil to about 190°C. Scoop spoonfuls of batter into the oil.  Cook for 3-4 mins. Drain, cover with syrup & sprinkle with cinnamon
