Fresh Pasta, Pesto etc

Fresh pasta

1 egg for every 100g white flour

 

Pesto

100g basil

50g pine nuts

50g Parmesan cheese

1 clove garlic

extra virgin olive oil

salt

 

Place the pine nuts, Parmesan cheese, basil & garlic in the food processor, add a sufficient amount of olive oil & blend.  Add salt to taste.

 

 

Sugo della Nonna

1 medium onion

1 stick celery

1 carrot

1 clove of garlic

1 bay leaf

4 pepper corns

1 bottle of Passata di Pomodoro

5 leaves of basil

olive oil

salt

 

Roughly chop the vegetables

Place all the ingredients, apart from the olive oil & the basil, in a saucepan with seasoning & simmer for 30 mins

Blend until smooth then add olive oil
