Lamb Kebabs with Cachumber Salad

Ingredients

1lb Lobbs own best end neck lamb – cut into small dice

1” ginger – chopped fine

4 garlic cloves – crushed

½tspn Green Cuisine tumeric

1 tspn Green Cuisine ground coriander

2 tspn Green Cuisine ground cumin

1 lemon – zest & juice

1 small carton of  natural yoghurt

4 chillies – seeded & chopped

salt to season

Combine all the ingredients & leave to marinate for 2 hours

Soak bamboo skewers in water to 10 mins (prevents burning when cooking)

Thread meat onto skewers & grill for 7-10mins – turning occasionally

Cachumber salad

1 red onion – sliced

1 mango  – sliced

1 green chilli – chopped

2 plum tomatoes – seeded & sliced

15 mint leaves – shredded

handful fresh coriander – chopped

½ tspn salt

2 limes – juice

Combine all ingredients & serve with a drizzle of extra virgin olive oil

Another good recipe suitable for mutton
