Ligurian mussels

Muscoli alla ligure

1kg clean mussels

1 medium onion – chopped

1 glass white wine

1 clove of garlic, finely chopped

2tbspns chopped parsley

olive oil

Saute the onion in olive oil until soft, stir in the mussels & cover the pot for 2 mins.  Add the white wine, half of the garlic & half of the parsley & cover the pot & leave until the mussels are all open

Add the remaining garlic & parsley & serve with crusty bread
