Bottoms Up Chicken

1 Lobbs Chicken

1 Lemon

1 Garlic Bulb

1 Can of Beer

Salt & Pepper

Method

Take your chicken and season well on the outside with salt and pepper and rub with lemon juice.

Season well inside the chicken cavity then pop in the remaining lemon and the garlic bulb. The garlic doesn’t need to be peeled but separate the cloves.

Open the can of beer and stand on a flat surface.  Place the chicken over the beer so that the beer can is inserted well into the cavity.

Cover well with foil and place on the bbq.

After 45 minutes turn the chicken over.  After 1½ hours remove the foil and brown off the chicken for the last ½ hour.

Check the chicken is done by inserting a sharp knife into the legs.  If the juices run clear then the chicken is done.
