Bramble Jelly

Bramble (Blackberry) Jelly

4lb blackberries

Juice of 2 lemons

1/2 pint water

Sugar

It is better to use slightly under-ripe blackberries. Put them into a pan with the lemon juice and water and simmer for 1 hour until the fruit is soft. Strain through a jelly bag and measure the juice. Allow 1lb sugar to each pint of juice. Heat the juice gently, stirring in the sugar until dissolved. Boil hard to setting point and pour into hot jars. You can spice the jelly with a 1/4 teaspoon of mace, nutmeg and cinnamon.
