Banana & Walnut Loaf

 

 

 

 

 

 

 

 

Ingredients

175g Wholemeal Flour

50g oatmeal

100g Trewithen butter, softened

100g soft brown sugar

2 tsp Baking Powder

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

2 free range eggs, beaten

3-4 ripe bananas, mashed

100g walnuts, chopped

Preheat the oven to 180˚c (or top oven of an Aga!)

Butter and line a loaf tin with greaseproof paper.

In a large bowl put the wholemeal flour, butter, sugar, eggs, oatmeal, baking powder, cinnamon and ginger. Beat together until mixed evenly. Stir in the bananas and walnuts. Make sure you don’t over mix.

Put mixture into the loaf tin and bake for around an hour, or until an inserted skewer comes out clean. Leave to cool on a wire rack.
