Tarte Tatin

12oz/325g Field Fare frozen puff pastry

6 apples, preferably granny smith, peeled, halved & cored

4oz/110g Trewithen Cornish Farm Dairy unsalted butter

4oz/110g  golden caster sugar


frying pan 10”/25cm in diameter with heatproof handle

Pre-heat oven to 200°C/400°F/Gas 6


Put the butter into pan on a very gently heat & let it melt

Add the sugar & stir continuously until it starts to turn darker.

Place the apple halves, round side donw & cook for 10 mins at medium heat

Cool for few minutes

Roll out the chilled pastry, place over the apples & tuck it between the pan & apples

Put pan into pre-heated oven & bake for 25mins

Remove from the oven, place a plate over the pan & turn quickly around, being careful not to burn yourself.
