One for the summer when the barbecue is fired up. Under the grill would also be fine, just not the lovely smokey flavours a barbecue gives.
2 Garlic Cloves, crushed
Juice of 1/2 Lemon
2 tbsp Olive Oil
small handfuls of fresh mint and parsley, roughly chopped
Slice the courgettes lengthways, thinly, brush with oil and put on the barbecue. Grill them until lightly charred in places (not all over!) Whilst these are doing, mix together the lemon juice, olive oil, garlic and a few twists of black pepper & seasalt. When the courgettes are looking nicely chargrilled, lay them out in a serving dish, pour over the dressing and chuck the mint and parsley over, turn the courgettes a few times in this mixture to coat.
